Tuscan Sausage and Bean Soup

2 Cans Great Northern Beans, drained and rinsed
1/2 can water
1 3/4 C beef broth
1/2 C chopped onion
1 clove garlic, minced
1/2 teaspoon dried Italian Seasoning, crushed
12 oz. fresh Italian sausage links, cut into 1/2 slices
2 C yellow squash or zucchini sliced
1 can (14.5 oz) stewed tomatoes, cut up
1/3 C dry red wine or water

Brown and drain sausage. Mix all ingredients in a crock pot and cook for 6-8 hours.

Add half a 10 oz package of frozen spinach, thawed and drained. Add 1/3 cup lemon juice.

Top with Parmesan cheese.
