2 Cups Tortellini–cooked as per package directions
3 cloves of garlic, chopped
1 Zucchini, chopped
1 Can diced tomatoes
1/2 Cup dry white wine
2 Tbs fresh parsley (or 2 tsp dried)
1 tsp dried oregano (or 1 Tbsp fresh)
1 tsp fresh ground black pepper
1 crushed red pepper flakes (optional)
Shredded Parmesan cheese
Extra Virgin Olive Oil
Sautee chopped garlic in olive oil over medium heat for about one minute (do not let it turn brown). Add tomatoes and heat to boiling.
Add wine. Add zucchini and cook for 3-5 minutes depending on your preference of crunchiness (unless already cooked).
Sprinkle in parsley, oregano, and peppers. Stir in cooked pasta.
Top with parmesan and a drizzle of olive oil.
